meet our latest foster dog, Molly…

We rescued her from a county pound in Indiana… a poor, overwhelmed rural shelter with too many animals and not enough people to help. Our dog, Grace, came from this shelter (she was a “foster” at first, but somehow managed to upgrade her status to “permanent resident” :) Molly is an incredibly sweet and gentle girl. She’s a lab/pointer mix, about 4 years old, and has most likely had puppies in her past – but is now spayed. She has a very shy, quiet demeanor and has charmed everyone she’s met. She’s great with other dogs and cats, and will make a loyal, loving companion for some lucky person someday. For now, we’ll welcome her here at the farm and give her all the love and care she needs until her new family comes along.

I wasn’t sure what I was going to do with all the wood I’d been collecting. I really thought I was going to have to carry it into the woods. Amy suggested just burning it and a couple days later I was master of the elemental fire!

After about a day of clean-up the back yard looks tons better.

The next video will show how we took care of the extra wood … :)

A couple weeks ago we started a big project to clean up the back yard.  This is the first video in the clean-up series.

I came home from work last week to find one of our neighbors over for dinner :)

I guess Emmy forgot the rule about NO dogs on the new sofa (she’s actually the only dog who comes in the newly remodeled “no-dogs-we-need-our-sanity” room — and that’s only because she can jump the gate with ease, so we can’t keep her out)…

 

It was a windy day on the farm due to hurricane Ike.  We really didn’t get any rain and the power only flickered once.  We had to do a little emergency fence repair (it looks like 5 or 6 posts came out of the ground) but looking around today it turns out we got off really lucky!  The power was still down at work today so I got doubly lucky :)

We made this chili earlier this week — and it’s really good!

(even John liked it a lot, and he’s kinda picky :) )

 

Vegetarian Chili
serves 8-12

1 tbsp olive oil
1 medium onion, chopped
3 medium carrots, chopped
4 cloves garlic, diced
1 large yellow bell pepper, chopped
2 jalapeno peppers, seeds removed, diced
2 celery stalks, chopped
2 tbsp chili powder
28 oz can crushed tomatoes with basil
14 oz can black beans
14 oz can kidney beans
1 cup corn kernels
1 tsp ground cumin
1 1/2 tsp dried oregano
1 1/2 tsp dried basil
2 tsp kosher salt
1/2 cup bulgar wheat
1/4 cup balsamic vinegar

Heat oil in a large pot. Add onions, carrots and garlic; sauté until onions are translucent, about 5 minutes. Add yellow pepper, jalapenos, celery and chili powder; cook another 10 minutes. Add tomatoes, beans (with liquid), corn, salt and spices. Bring to a boil. Cover, lower heat, and simmer for 20 minutes. Stir in bulgar wheat. Cover and simmer at least 30 minutes (I usually let everything simmer for a couple of hours to let the flavors really develop, but it’s okay to take it off when the veggies and bulgar are soft), stirring occasionally to prevent sticking. Just as you’re taking the chili off the heat, stir in the balsamic vinegar. I know it might seem weird to put it in, but trust me—it really does make the chili taste extra amazing.
